Cherry Crunch Pie

Cherry Pie is one of my favorites.

Here is a very quick and easy cherry pie.

Printable Cherry Crunch Pie Recipe

I could spend all day making detailed cupcakes but when it comes to pie, I'm a cheater. I am all for a quick pie with shortcuts.  Frozen pie crust and frozen fruit whip up together into a nice pie.

First, make a homemade pie crust using your favorite recipe - or - cheat and buy a frozen crust.

Next, whip together a crunchy topping:

In a mixing bowl (or cheat with your electric mixer), mix together 1/2 cup flour, 3/4 cup brown sugar, and 1/2 tsp ground cinnamon. Next, chop up 1/2 cup cold butter into small cubes and mix it in. Use the electric mixer to mix, or cut the butter in with a pastry cutter.  Last, give the cup of  oats several stirs into the mix.

Now, throw together the filling.  I like to use Wyman's frozen dark sweet AND red tart cherries. It gives the pie and great sweet and sour punch. The nice thing is the 2 pound bag is 6 cups so just dump the entire bag in a bowl.  Or - pit a variety of fresh cherries and throw 6 cups in the bowl. Mix 1 TB of lemon juice into the cherries.

In a separate bowl, stir 1/3 cup granulated sugar, 1/4 cup flour, 1 TB corn starch. Stir the dry ingredients into the cherries.

Put the cherry mix into two 8 or 9 inch pie crusts.  Or, use 6 5" crusts for mini pies!

Crumble the topping into chunks and pile on top of the cherries

Bake at 350 F for 40-50 minutes. The pie crust and topping should be nicely brown and juices should be bubbly around the edges.
