Raspberry Cupcakes
with Raspberry Filling and
Raspberry Cream Cheese Frosting
by Theresa Arasim
These are simply my favorite cupcakes. They have a great pop of flavor from the use of both frozen raspberries AND freeze dried raspberries. I like cupcakes that have filling. I think it's because I just like surprises in life! So I always start by making the filling first so it can cool down before I need to fill the cupcakes.

After the filling, sometimes I make simple buttermilk cupcakes. Sometimes I make chocolate cupcakes. Here are the recipes for each:

Moist Buttermilk Vanilla Cupcakes
To fill the cupcakes, just cut a hole in each. Don't throw out the cupcake holes. You can make tiny trifle desserts with your leftovers. Check my blog to learn how to make the tiny desserts.
I love raspberry cream cheese frosting. The trick to this frosting is to use the freeze dried raspberries. I buy them at Trader Joe's. To grind them into a powder I use my smoothie blender. You could probably use any blender. Before you add the raspberry powder, just whip up the frosting for awhile in the mixer to make it nice and fluffy. After you add the raspberry powder, just mix until it is all combined. I like to top them with a real raspberry or a gummy raspberry will also do. Enjoy!!

If you have leftover cupcake holes, filling and frosting, you can make these tiny little dessert parfaits.
