Peanut Butter Cup Cupcakes
I recently served cupcakes at a wedding and out of 6 flavors, the chocolate cupcakes with peanut butter frosting were the first to run out. My sister-in-law, Cindy, received these cupcakes once for her birthday and has asked for them every year since. Everyone thinks the frosting is some super secret recipe. It is actually super easy to make and I am happy to share it here!!
I start by baking cupcakes using my favorite chocolate cake recipe:

I recommend using a Kitchen Aid mixer for the peanut butter frosting. I also recommend Jif Creamy Peanut Butter. I would not recommend any type of natural peanut butter because the texture just doesn't seem appealing to me. The peanut butter and butter need to be at room temperature. First, mix the peanut butter and butter together and run the mixer on high for a few minutes until they appear fluffy and lighter in color. Then, add the whipping cream and whip for a few more minutes. It gets really creamy and fluffy the longer you mix. I like to decorate by adding a swirl using an Ateco large open star tip and topping with a Reese's mini peanut butter cup.I hope you enjoy these delicious cupcakes!
