Super Simple BBQ Ribs

We had a chance this August to spend a weekend with a good group of friends - 9 kids and 9 adults. My friend Cindy brought along Will. We all loved Will right away, especially my dog, Harley. Harley is a good judge of character and he keeps his list of friends less than you can count on two paws, which is why we knew Will was pretty awesome.

Will brought along 6 full racks of pork ribs to cook for dinner for the group. I asked him to walk me through the process of cooking the ribs. It all starts easy with 2 big bottles of your favorite BBQ sauce. Will picked out Sweet Baby Ray’s this time. Will made a double layer foil packet for each of the racks and then he slathered each of the racks in sauce and folded up the foil.

Then they all went into the oven at 240 degrees.

After almost three hours, Will opened each of the rib packets, drained off the juices, basted them with sauce and put them back in the oven for another 3 hours.

While the ribs cooked,  our dear friends Carlos and Jennifer hosted up a tiki happy hour. That will be another post one of these days.

After the ribs had been in the oven for 6 hours, Will pulled them out and put them on the grill with the foil open where they cooked for another hour or so.

I've got a Traeger smoker and I love to make up a homemade rub and spend a good 12-14 hours smoking up ribs. It's hard work and time consuming.  I've got to admit, Will had the simplest method ever for BBQ ribs. Just lots of ribs, lots of sauce, 6 hours in the oven and however long it takes to finish them off on the grill. A great simple way to make up a meal for a big group of friends.

Thanks again, Cindy and Will for an amazing dinner.
